A dense and delicious cake which you can serve as a birthday cake even for people who prefer healthy food. The cake is full of carrots, walnuts and it is excellent even though it is made of wholemeal flour. There is nobody who wouldn´t like it. I recommend to prepare a carrot cake layers one day before and to fill and finish the cake the second day. And eat it the third day. Resting in the fridge is good for the taste of the cake.
Preheat the oven to 165-170°C (329 - 338 °F)
Prepare a round cake pan greased with butter and lined with parchment paper.
Whisk eggs with sugar, vanilla extract, lemon zest and lemon juice. Add all the other ingredients – carrots, walnuts, coconut, oil and flour mixed with baking soda and salt. Mix everything well and pour the mixture to the round cake. Bake about 50 minutes. To test when the cake is ready put the toothpick into the center of the cake and the toothpick has to come out clean.
Whisk butter, sugar and vanilla extract until creamy. Add the cream cheese and mix it well. Whisk the whipped cream well and add it to the mixture. Cut the cake in half. The bottom layer spread with more than half of the cream and put the second layer on. Than spread the rest of the cream on top and sides of the cake. Decorate the cake with roasted almonds or grained walnuts.
